Next time, when you bring the jam back to a rolling boil for the second time, your candy thermometer should read 220°F. Another test to see if the jam is done is to place a drop it on a cold plate. After it cools down (2 minutes), if you tilt the plate and it stays in place, it's time to put into the jars.<

It's funny, a German roommate of mine recently bought cherries to make a sort of crumble cake and she was horrified that the only ones she could find were sweet. Are tart cherries more common in Europe? I didn't even think to ask.

[For the record, the cake was amazing, and I helped her pit the fruits... with a paring knife. I think it took about 3 days before my hands turned
